Lima sits on the desert coast with one of the best kitchens in the world, the Andes rise behind it to four thousand metres, and the Amazon starts on the far side. Quechua is still spoken in the mountains, and Inca stonework holds up buildings the Spanish put on top of it. Go slowly and let the altitude decide the pace.
